SPRING IS SPRUNG
Spring is one of our favourite times of the year. Clocks go forward, days feel longer, and warming weather hints that summer is not far away. And it’s when we launch our new Spring menu after carefully selecting what we feel is right to serve in our restaurants at this time of the year.
As always we love to include dishes featuring authentic Scottish seafood supplied by the original Loch Fyne Oysters company, located at the head of Loch Fyne in Argyll on the west coast of Scotland.
Our Spring menu offers some well-known dishes which are favourites with regular visitors to our restaurants. These include delicious starters such as Loch Fyne’s Classic Smoked Salmon, which is the company’s signature smoked salmon product. It is gently smoked to perfection by Loch Fyne’s Master Smokers in traditional kilns which are fired using oak shavings from Scotch whisky casks. This give the most exquisitely delicate flavour and texture that melts in the mouth. Try it as we serve it with baby capers, horseradish & chive cream, accompanied by rye bread.
Loch Fyne’s Golden Shell Hebridean Mussels are harvested far away in the clear waters of Loch Roag on the Isle of Lewis in the Outer Hebrides. These mussels are stunning when classically cooked with white wine, cream, garlic & flat leaf parsley, with crusty white bread for dunking in the delicious sauce! Perfect as a starter or as a main course when served as a larger portion.
A popular main course for seafood lovers is our Loch Fyne Shellfish Platter With Whole British Crab Or Lobster. This is presented on ice with golden shell Hebridean mussels, Scottish langoustines, crevettes, Manila clams, and Loch Fyne oysters. Served with lemon, Tabasco, Fyne vinegar and mayonnaise, it is ideal for customers having a celebration, or when treating friends or family.
And for diners sticking with a fishy option, our Loch Fyne Salmon Fillet is a perfect choice at Springtime. Enjoy it cooked to your liking; either pan-fried, grilled or steamed, served with a mouth-watering butter or sauce and two sides of your choice.
