The salmon we serve in our restaurants is supplied by the original Loch Fyne Oysters company, located at the head of Loch Fyne in Argyll, Scotland. Our Scottish salmon is renowned for its quality, and our partner supplier operates to the GlobalG.A.P. standard which ensures traceability throughout the supply chain. This GlobalG.A.P. certification is important to us, as it assures that responsible and ethical farming practices have been rigorously applied to produce quality salmon which we can all trust and enjoy.
We are committed to ensuring that we continue to support the highest farming standards. All our salmon is therefore responsibly farmed and sourced exclusively from GlobalG.A.P. approved farms in the cool, clear waters of Loch Fyne and elsewhere on Scotland's West Coast.
For starters we offer a selection of delicious Loch Fyne smoked salmon.
Classic Smoked Salmon is hand cured with a mixture of sea salt and golden sugar. It is then oak smoked for a minimum of 10 hours to create a graceful flavour with a buttery texture that melts in the mouth.
Bradan Orach (Gaelic for "Golden Salmon") is a full favoured Scottish smoked salmon. Dry cured then cold smoked for longer by Loch Fyne's Master Smokers, Bradan Orach achieves a more intense taste sensation with a fuller, richer flavour and a moist, smooth texture. If you appreciate the gentle smokiness and depth of flavour of traditional smoked salmon, then you will simply love Bradan Orach!
And, for diners looking for smoked salmon flavours with a twist, be sure to try Loch Fyne's Makar Gin Infused Salmon, with notes of juniper, black peppercorn and citrus and a delicate texture. Or experience vibrant Double Cured Beetroot Smoked Salmon, which has a subtly sweet flavour with earthy undertones and a deep red velvety colour.
