You will need:
Shallots long 50g
White wine 20ml
Double Cream 50ml
Flat parsley 2g
Wash the mussels, clean off any barnacles and remove the beard.
Finely dice the shallots and garlic and finely chop the parsley.
Place the mussels in a pan with the shallots, garlic and white wine then cover and cook until mussels are open.
Add in cream and salt then cook for one minute before taking it all off the heat.
Finish with chopped parsley and serve with lemon and crusty bread.
If you would like to do this for a main course simply double all the amounts and serve with French fries.
