pan fried meagre

Serves 2

You will need:

Meagre 310g
Okra 100g
Fresh Coriander 5g
Pomegranate Seeds 15g
Olive Pomace Oil 20ml
Seasoning

Raita (200g)

Greek Yoghurt 250 g
Fresh Herbs Mint 10 g
Half a Cucumber
Seasoning

De-seed the cucumber and grate, finely chop mint and mix all ingredients together, add seasoning

Bombay potatoes (300g)

Rapeseed oil 60 ml
Potatoes 300g
Cherry Tomatoes 400g
Fresh Herbs Coriander 20g
Garam Masala 4g
Ginger 40g
Ground Coriander 10g
Chilli Powder 4g
Ground Turmeric 4g
Vegetable stock 1 cube
Water 700ml
Seasoning

Mix everything together in a pot and bring to a simmer for approximately 20-30 minutes, add seasoning

Preparation:

Keep the potatoes slight wet and heated as we prepare the Meagre
Divide the Meagre into quarters and pan fry along with the okra

To serve:

Plate the potatoes mix and place the meagre and okra on top
Drizzle the Raita as you please and finish with the pomegranate seeds
